冬蔭公雞翼

6月遊泰國時買了超多醬料,一直放埋一邊,最近終於扚起心肝試煮。這個冬蔭公雞翼超易煮而且好好味,喜歡吃泰國菜的要試!

材料

雞翼10-15隻
南薑1片,切碎 -或- 1茶匙南薑粉
香茅1至2枝,拍扁後切碎
檸檬葉5片,切碎
紅蔥頭2個,去衣拍扁及切成蓉
指天椒3至5隻,切碎
泰式辣醬2湯匙
魚露1湯匙
青檸2個,榨汁
糖1至2茶匙

製法
1. 把已切碎的南薑、香茅、檸檬葉、紅蔥頭、指天椒、泰式辣醬、魚露及1湯匙水拌勻成醃料,加入雞翼醃過夜。
2. 燒熱平底鑊,煎香雞翼兩面,倒入醃過雞翼的汁料及兩湯匙水,加蓋以小火煮7至10分鐘。
3. 加入青檸汁及糖炒勻,若汁料過稀,可加入生粉水打芡即可上碟。
